Margherita Pizza "Although Noble Crust is not my own, I take pride in it and I get to create the menu." Where did you grow up and how did it influence your cooking style? My cooking style actually came later in life, not necessarily from where I grew up. I grew up in Palm Harbor, ������������������������������������������������������������������������ ���������������������������������������������������������������������� called Magnolia Grill, which served southern style cuisine. I washed dishes and fried chicken – that’s all I was allowed to do. Slowly I moved on to other stations. I eventually got to the point where I was running the kitchen. It was a really good introduction to southern food – a kind of down-home cooking where everything is rustic but ������������������������������������������������������������������������������ my work ethic. Did you know you wanted to be a chef or did that first job mold that desire? At a younger age I wanted to be a skateboarder or something silly like that...nothing of real substance. ������������������������������������������������������������������������ time where I thought, “Wow, this is something that I can actually do as a career.” Where did you go from there? My senior year in high school I did ���������������������������������������������������������������������� spent half the day studying culinary arts and learning fundamental skills like how to make hollandaise sauce, how to braise etc. After that I knew I wanted to go to culinary school ������������������������������������������������������������������������ ������������������������������������������������������������������������ �������������������������������������������������������������������������� ������������������������������������������������������������������������ travelled around the country training ���������������������������������������������������������������������� to Orlando for culinary school at ���������������������������������������������������������� technique and fundamentals. I knew I wanted to do more and I couldn’t ������������������������������������������������������������������������ Orlando area. I had a friend in New ���������������������������������������������������������������� ���������������������������������������������������������������������������� So I moved to New York with a suitcase of clothes, a skateboard and my knives. I was only supposed to ������������������������������������������������������������������������ love with the restaurant and the city �������������������������������������������������������������������������� I eventually moved over to Olives in ������������������������������������������������������������������������ learning Mediterranean and Italian ���������������������������������������������������������������������� what was at the green market that �������������������������������������������������������������������������������� working with seasonal ingredients and really understanding what grows together goes together. How did the name and concept of Noble Crust come about? I always envisioned opening my own �������������������������������������������������������������������� �������������������������������������������������������������������� pride in it and I get to create the �������������������������������������������������������������� opened was meant to be a small ������������������������������������������������������������������������ ������������������������������������������������������������ ������������������������������������������������������������������ they did a lot of traveling around the country and saw a lot of artisanal and Neapolitan style pizzerias. We started doing R&D for pizza and bought a ���������������������������������������������������������������� ������������������������������������������������������������������������ menu is gigantic and pizza is only �������������������������������������������������������������������������������� huge focus and we put a lot of work and dedication into it to make sure everything is consistent and delicious. ���������������������������������������������������������������������� ���������������������������������������������������������������������� place. It's cool that we grew beyond what we wanted. As far as the name, the owner’s liked noble because it is strong and decided on crust because it has the pizza element to it. How do you describe the offerings at Noble Crust?
