Fifteen years ago, she went on a series of short-term fasts at her church and felt better, but soon returned to her standard American diet. Finally, ten years ago, she and her husband Jeff, decided to go “whole hog”—without the ham or bacon, that is—completely revising their food lifestyle—omitting junk food and removing meat in favor of a balanced plant-based diet. Within one year, the couple’s blood work revealed perfect health, and as she introduced family and friends to their new way of eating, they too experienced dramatic increases in health, including, in one woman’s case, a 100- pound weight loss. As a world traveler, she replicates multi-cultural palettes in her food preparation. Ginger explains, “For years I felt defeated in my mind and desperate in my body. I realized I had to make a decision to change my mindset into thinking I CAN achieve a healthy lifestyle and be excited about it. Preparing and eating the foods that are loaded with the best possible nutrients so our bodies will run and sustain us is essential.” Ginger teaches classes on healthy living, including one that meets in her home. She shows people how to prepare a wide variety of tasty whole foods that will fit in with their own lifestyles and taste preferences. Driven to reach more people with her life-changing message of restoration, she recently released the book, “Thyme 4 Ginger” in conjunction with a website of the same name. Not only does the book recount her own triumph over a lifelong struggle with food addiction, Ginger insists that this change of eating lifestyle is not nearly as difficult as one might imagine. She is now packaging and selling her chocolate and key lime organic and raw tarts made with cashews, coconut oil, chia seeds and more. A raw/vegan cookbook is in the works, but the featured recipes are available now in her classes. Ginger Skinner is a Registered Nurse who studied at Polk State University and also studied nutrition.
