TEMPERATURE Is boiling water “bad” for coffee? Of course I remember boiling water in a percolator coffee pot on the back of the stove (that was strong stuff) but now we have learned that boiling water is bad for coffee … at least for extracting the flavor from the ground coffee beans. Many modern coffee makers now have temperature settings for the brewing and “blooming” process. Now some coffee connoisseurs or the folks at the Specialty Coffee Association of America recommend that when making coffee, the coffee water starts with just enough water to slightly soak the grounds until they bloom, which is about 45 seconds (give or take a couple of seconds), then, slowly adding the rest of the water over a minute or two to extract the flavor. Apparently extra soaking will get you extra flavor, which will be extra bitter. These type of specialty coffee makers are just hitting the markets so you have to explore to find these pots.
