Gluten-Free Goodness BY CHELLE KOSTER WALTON You could say that Ruth Wardein had an epiphany when she realized Naples was ready for its first gluten-free bakery with a dedicated storefront. She had been baking for decades to suit her and her father’s celiac diet. As gluten-free ingredients appeared on the market, Wardein, a ballet teacher, began baking for customers and selling at farmer’s markets in 2012. She envisioned a “safe place” for those like her, where they could indulge in remembered comfort food and sweet treats without having to worry that gluten would crash the experience. Epiphany Gluten-Free Bakery opened in North Naples this summer, after selling from the storefront’s sidewalk for many months. Wardein bakes more than 50 sweet and savory treats, which are also customized for vegan, dairy-free, low-sugar, Paleo, and a slew of other diets and sensitivities. Her café menu features pancakes, waffles, chicken pot pies, pizzas, soup bowls, and “other things you miss if you’re glutenfree,” she says. “Food is emotional. It’s hard for people to change.” But Wardein says she experiments extensively to find the right taste and texture for her gluten-free versions of comfort-food favorites. “I feel like a mad scientist,” she says. 8 Dine239 (App for thAT!)
