Negroni 1oz London Dry Gin 1oz Campari 1oz Dolins Sweet Vermouth Gently stirred Poured over rocks Twist of Orange What is the Collection? It's a chance to put a collection of best practices together! Collection of People, Spirits, Beers and Wine! The collection to me is a chance to reset the idea of a 'quality drinking establishment' where we do serve great drinks with premium and fresh ingredients but that’s just a part of the reason you would come here. We value great service foremost. We handpicked the collection team based on their wonderful friendly personalities. They just have more than one string to their bow! Why did you decide to open it? The chance to work with and help highlight future stars in hospitality. By opening the collection I can spend more time with guests and staff alike. Having a partner like Jamal Wilson, the founder of The Hall, made it possible. Sharing my vision on service and continued learning with the staff makes it even better. It's nice to be back on the bar. What makes The Collection special and unique? Celebrating the classic Americana spirit paired with you’ll experience a truly unique bar atmosphere, where every sincere detail is designed to inspire your palette. Why did you name it The Collection? Funny enough... Both Jamal and I had the Idea to name it the Collection. For him it was the Collective Eatery about the hall. For me the Collection name spoke about the collective of the team behind and in front of the bar. So naming the bar The Collection was really the easiest decision. Taylor Katz The Collection Beer Program Director Owner of Cultured and Craft Why and how did you become involved with The Collection? I was informed about the concept behind the Hall on Franklin and in getting to know Ro Patel over the years, the focus they have on community collaboration and higher education made my involvement in the project a no-brainer. The Collection truly aims to bring together experts in each area of a total bar experience and I am honored to be involved in curating the beer program and tailoring continued education opportunities to the staff. My intention is to ensure each and every guest has a service experience that is knowledgeable on not just the craft beer selection we offer but also has the ability to guide those new to craft beer into a style and selection they will enjoy. We will work with several local breweries to create unique beers including Hidden Springs who will be brewing a Hall exclusive beer to complement our many food selections. What is your favorite summer beer? Typically anything light bright and refreshing. Right Sea Quench Ale (a session lime tart ale).It is perfect for beach days however choosing a favorite for all summer is near impossible. That’s the great thing about craft beer right now, there is always something new to try! Victor Manuel The Collection Wine Program Director Why and how did you become involved with The Collection? “The use of traveling is to regulate imagination by reality, and instead of thinking how things may be, to see them as they are.” – Samuel Johnson. I am an individual enamored with culture, food, drink, and traveling. As long as I can remember I have had a profound attraction for different cultures and an addiction for adventure. What better way than through wine to bring about language, history, culture and camaraderie. Since working in gastronomy for about 15 years I have continuously found a love for wine and the story it has to tell. When we open a bottle of wine, there inside is a liquid that is the result of nature, labor, and love. The story of wine is the story of human civilization, and that in of itself is something marvelous. That is what approached to become a part of a new and progressive establishment we call the Hall, I immediately jumped at the opportunity. To contribute to the up and coming Downtown/Tampa Heights scene is an honor for me. As a Tampa native I am excited to share my love of wine with the community and transform the way we think about wine while converting the old stigma of a beverage that so often times is perceived as an elitist libation. What is your favorite summer wine? St. Urbans-Hof Bockstein Riesling! A very regal and elegant wine! Oh did I mention, super refreshing!
