Champagne Wishes
Rosé Champagne is one of the most seductive wine categories, and a perfect fit for date night. As with other forms
of bubbly, the carbon dioxide carries the alcohol immediately into the bloodstream, so it’s no coincidence we feel
silly after a glass or two. The major Champagne houses have traditionally kept Rosé production low, so it tends be
more expensive and harder to find—not unlike true love. Here are some choices in all price ranges —Mark Spivak
Nicolas Feuillatte Brut Rosé
($45): Blended from 90-percent
red grapes (Pinot Noir and Pinot
Meunier), this harmonious and
elegant wine is aged at least
three years in the cellar prior to
release. The racy red fruits pair
well with exotic cuisines, such as
Indian and Vietnamese.

Veuve Clicquot Brut Rosé 2008
($90): From a vintage known for
powerful fruit and crisp acidity,
the 2008 explodes in the mouth
with a profusion of red berry
flavors. The texture is rich and
ample, making this a good match
for dishes ranging from salmon
to lamb.
Krug Brut Rosé ($295): “There
is Champagne,” goes the saying,
“and then there is Krug.” The
style is exotic and controversial,
a sensory overload of ripe
raspberry, red currant and
rhubarb, along with a tinge of
earthiness. The wine cries out for
veal, pork, poultry, or wild game.
