PUMPKIN
COOKIES
Here’s a great fall cookie recipe passed down from
my mother in-law some years ago. I wasn’t sure
about the whole pumpkin and cookie thing at first.
Then my mother in-law made them and I was in love.
A very popular cookie up here and I hope they will
be with you, family and friends. Enjoy!
16 oz Pumpkin 2 tsps. Vanilla
2 Tbsps. Milk 4 tsps. Baking Powder
2 tsps. Baking Soda 2 tsps. Cinnamon
2 Cups Sugar 1 tsp. Salt
1 Cup Vegetable Oil 6 oz semi-sweet choc chips
2 Large Eggs 6 oz butterscotch chips
4 Cups All Purpose Flour
First, mix 1st three ingredients together. Then add
each following ingredient, one at a time, mixing well
as you go. Dough should be fairly stiff when done.
Drop, healthy teaspoon size, on ungreased cookie
sheet. Bake 10 minutes at 400 degrees. When
cooled store in air tight container(s) with waxed
paper between layers. Makes 6 to 7 dozen.
NOTES:
1. Use regular pumpkin mix NOT pumpkin pie mix.
2. Use whatever you like in addition to or in
place of chips.
3. May seem cakey when first done,
but will become softer.
4. Time may vary according to oven.
