My Mom is part German, part Czechoslovakian and is married
to my Dad who is 100% Italian. These are recipes from both
sides of the family and she is an avid cook. These are a couple of
recipes she would make when it was cold outside. Nothing better
than comfort food to warm you up on a cold chilly night. These
are easy to make and I’m sure your family will enjoy them.
PASTA FAGIOLI
(VEGETARIAN STYLE)
• 1 onion chopped
• 2 cloves garlic chopped
• 2 tbs parsley (fresh if have or dried)
• 1/3 cup basil (fresh chopped or dried)
• 1 can diced tomatoes (14.5 oz)
• 1 can tomato paste (6 oz)
• 4 cans water (8 oz) or 4 cans vegetable broth (8 oz)
• 2 cans great northern beans or cannellini (16 oz)
• 1 can kidney beans
• 2 pinches of salt and pepper
• 1 box ditalini pasta or other small pasta like elbow
• Parmesan cheese
Saute onions and garlic on low heat until tender. In a separate large
pot add water or broth, parsley, basil, tomatoes, tomato paste, both
beans on medium heat. Add garlic and onions to pot
& mix together. In a separate pot cook pasta till
al dente and then add to soup. Serve with
parmesan cheese sprinkled on top.

MOM’S CINCINNATI CHILI
• 1 1/4 lb ground beef (80/20 preferred)
• 1/2 cup chopped onion
• 1 1/2 cups chopped green peppers
• 3 tablespoons chili powder
• 2 1/2 cloves minced garlic
• 2 1/2 cans tomato sauce (10.75 oz cans)
• 1 can kidney beans (15 oz)
• 1 1/4 tsp distilled white vinegar
• 1/4 tsp ground cinnamon
• 1/4 tsp ground nutmeg
• 1/2 cup shredded cheddar cheese
• a small container of sour cream
*serves 6 and easy to make
Cook ground beef, peppers, onions, chili powder, &
garlic till browned and vegetables are tender. Drain off
fat if any. Add undrained kidney beans, tomato sauce,
vinegar, cinnamon & nutmeg to mixture above and bring
to boil. Turn down to simmer for 15 minutes. Cook
spaghetti (if preferred) and serve chili on top of
it with cheddar cheese and sour cream. You can
also add a pinch or two of cayenne pepper (if you
like it spicy) to the ground beef when cooking.
