According to Merriam-Webster, a crêpe
is a small, very thin pancake. However,
surface of what a crêpe truly is. A crêpe is so
much more than that, and in all honesty, I think
both Merriam and Webster should be ashamed.
Up until recently, we in central Arkansas have
not had ample opportunity to enjoy this versatile
food item. Thankfully, that has changed. A
Little Crêpesy is a charming food “truck” that
has hit the ground running, and yes, their bill of
fare is the delightful crêpe. Owner Brett Todd is
no stranger to the art of crêpe creation; about
10 years ago, she ventured into the restaurant
world and opened Lemon, A Crêpe and Coffee
Company in the Hillcrest neighborhood of
Little Rock. It was a refreshing option that
complemented the restaurant scene back then.
Unfortunately, the recession hit around the
decision of putting her dream aside…until now.
Over the past decade, Brett and her husband
Walt have not given up on the restaurant life.
In fact, during this time, they, along with their
friend Kelly Lovell, have opened the wildly
successful Count Porkula BBQ food truck and
brick and mortar location in The Rail Yard.
Well, now it’s time to give crêpes another go.
Brett always had the idea of converting one of
the horse trailers on her family farm and giving
it a new life, and that is exactly what she did.
She has taken this trailer and made it essentially
Lemon on wheels right down to the decorative
graphics on the side. This brings about a great
explanation that Brett was kind enough to share.
Obviously, the lemons themselves pay homage
wings and a halo that adorn a few of these.
This is done to pay tribute to Brett’s uncle and
cousins that tragically passed away some years
back. This uncle always believed in Brett and
encouraged her every step of the way, so it only
made sense to her that he and his children be
honored with the resurrection of her dream.
Well, we couldn’t talk about the newest food
truck in town without giving a rundown of the
menu. As Merriam and Webster mentioned, the
best description of a crêpe is a thin pancake
itself is light and delicate and serves as the
most elegant envelope for whatever suits your
culinary curiosities. There are 8 crêpe offerings
that are on the menu at one time – four sweet
and four savory, and the batter is different for
is no limit to what a crêpe can do, and Brett
and her team make sure of this with the items
that are available. These
include everything from
Nutella and fruit as well
as meats (including Count
Porkula’s BBQ), cheeses,
and vegetables; do with
them what you will.
Brett attended classes
to learn the art of crêpe
making from a skilled
French artisan, and she
is passing this skill down
to her crew, including her
daughter, whom you will see working the line
more often than not. Each member of this
an expert in their craft, and needless to say, it
shows. These aren’t your typical handheld food
options. The Crêpesy crêpes are lighter and
more delicate than most, so a knife and fork are
in order. Filling and fancy.
A Little Crêpesy will be a mainstay at the Rail
them at various food truck meet-ups including
Bramble Market, Me and McGee, and The
Bernice Garden just to name a few. You will not
option is to have A Little Crêpesy come to you.
Catering is available for parties and events, and
the versatility of the crêpe will meet the needs
of all of your guests. If they want something
savory for a meal, have a crêpe. If they want
something sweet and indulgent for dessert, have
a crêpe. If you want the best of both worlds,
have Walt and Kelly with Count Porkula join the
fun.
