Nothing says season’s greetings like festive holiday
food and drink, so we’ve checked in with some of
our favorite families to see what seasonal treats they
serve for the holidays. First, we have Straight Up Mobile Bar
founder and CEO, Zee Renta, with a seasonal punch that is
sure to quench the thirst of many. Whether non-alcoholic or with
a boozy kick, a good party punch is perfect during the holiday
season. Next up we have our Graphic Designer’s mom, Adrienne
Swesey, sharing her mother’s Hanukkah tradition goodness with
Elsie’s Potato Latkes. Finally, we give you Ginger Bentz’ traditional
Date Nut Bread in a Can – a favorite of her son’s, Watermark’s
publisher. However you celebrate the holidays, we hope you
have a delicious time this season.
Straight-Up Holiday Punch
Ingredients:
3 cups of Cranberry Cocktail Juice
3 cups of Pineapple Juice
1½ cups of vodka (optional)
4 cups of non-alcoholic Sparkling wine
(or 1 bottle of 750ML of Prosecco)
½ cup of Frozen Cranberries
1 lime sliced
Mint leaves as garnish
Instructions:
Grab your favorite glass pitcher or
punch bowl
Stir in your
Cranberry
cocktail juice,
pineapple juice
Add your
sparkling wine
or alcoholic
ingredients
Add Ice
Finally add
your sliced lime and frozen cranberries,
stir ever so gently top with mint garnish
and serve to your guests!
Elsie’s Potato Latkes
Ingredients:
2 lbs. Potatoes (Yukon gold are good)
2 large eggs
1 large yellow onion
Salt to taste
4 tbs.
Matzo meal
Oil for frying
Instructions:
Peel and
finely grate
potatoes
and onion.
Drain and
squeeze
them as dry as possible.
Beat eggs and salt together lightly, add to
potato and onion mixture.
Add in matzo meal and stir
until completely combined.
Heat oil, and fry until one side is golden
brown, turn and repeat.
Can be served with applesauce or
sour cream.
Date Nut Bread in a Can
Ingredients:
5, clean, empty soup cans (15 ounce)
1 cup (8-ounce pkg) diced dates
3/4 cup raisins
1 tsp baking soda
1 cup boiling water
2 Tbsp soft butter
1 cup sugar
1 tsp vanilla
1 egg
1 1/3 cups flour
3/4 cup chopped walnuts or pecans
Instructions:
Place dates and raisins in bowl. Add
soda and boiling water. Cover and
let stand.
Cream butter and sugar. Add vanilla,
then egg, and beat well. Add flour,
mix until moistened. Pour in fruit
mixture, including liquid, and pecans,
and mix gently to prevent crushing
the fruits.
Generously grease cans, being very
careful not to cut yourself on top of can.
Turn dough into prepared cans, filling
each 2/3 full with dough, pressing down
with spoon. Place cans on a baking sheet
and cover tops of cans with inverted,
greased baking sheet.
Bake at 325 degrees for 45 minutes, or
until bread tests done.
Slice thin and serve with whipped
cream cheese made by whipping a few
tablespoons of milk with cream cheese.
