STEAK
TARTARE
RECIPE
4 tablespoons chopped egg whites
4 tablespoons chopped egg yolks
4 tablespoons brunoise red onions
4 tablespoons fine chopped parsley
Mix all ingredients and mold however you
like. Place quail egg on top and garnish
with microgreens. Serve with crostinis or
crackers.
Ingredients:
2 cloves of crushed garlic, peeled & minced
1 teaspoon cornichon
1 quail egg for garnish
2 tablespoons Dijon mustard
Salt & freshly ground black pepper
1/4 cup olive oil
1 pound freshly chopped beef tenderloin
1/4 cup minced shallots
