John Burt, Chef – MYLO Coffee Co.
John graduated culinary school in Baltimore
in 2009. He worked in Washington, DC under
Chef Morou Ouattara at Kora Restaurant,
where he was a junior sous chef. He worked in
some of Baltimore’s most renowned restaurants,
including Woodberry Kitchen under James
Beard Award-winning chef, Spike Gjerde, as well
of the Foreman-Wolf Restaurant Group, which
is consistently ranked in the top 10 restaurants
in Baltimore. John traveled to France in 2013
and staged at La Beaugraviere in Mondragon,
France, under Chef Guy Jullien. He moved to
Los Angeles in 2014, where he met his future
wife, Paige Russell, while working at Flores.
They both left Flores to be part of the opening
team at Hatchet Hall, where he was Sous Chef
and in charge of the preservation program as
well as creating numerous dishes for the menu.
They relocated to Little Rock in late 2018 after
their son was born to be closer to family.
Matt Britt, Director of Coffee – Standard
Roasting Co.
Matt Britt came to Arkansas
from his sunny home state of
California where he worked
in the Specialty Department
at Whole Foods. In this role,
beer, and spirits, and he was in
charge of guiding customers
through the different products
and ensuring that they were
getting exactly what they were
looking for. This time tasting
different wines, beer, etc. really
helped develop a discerning
14
palette. This experience immediately translated
to the cupping table when he got into coffee.
He has been a barista for over four years at
four different craft coffee shops across three
different states. His passion for delicious coffee
and improving the lives of others has led him
to become the Director of Coffee for Standard
Coffee Co.
A quality team like this makes for a quality
experience. There is no denying this ideology.
The time and effort that has gone into
assembling these integral personnel is evident
in what they have accomplished, and will be
proudly displayed in what is yet to come.
The idea has been, for some reason, you
cannot get quality craft coffee conveniently.
Michael and the team at Standard Roasting Co.
glad that they asked this question and have risen
to the challenge.
