Bar-B-Que Slaw
Sandwich with
Caramelized Onions
Slaw
1/4 cup vegan mayonnaise
1 1/2 tablespoons nondairy milk
2 teaspoons apple cider vinegar
1/2 teaspoon celery salt
1 1/2 cups shredded cabbage
1/3 cup shredded carrots
1 tablespoon diced onions
Salt and black pepper
Sandwich and filling
1 tablespoon olive oil
1/2 onion, sliced into rings
One 10.6-ounce package Upton’s
Bar-B-Que Jackfruit
4 burger buns
Barbecue sauce
1. Prepare the slaw: In a large
bowl, mix the vegan mayonnaise,
nondairy milk, apple cider vinegar
and celery salt. Add the cabbage,
carrots and diced onions. Add salt
and pepper to taste. Chill until
ready to serve.
2. In a frying pan over low, heat the
olive oil. Add the onion slices and
cook for 10-12 minutes, stirring frequently,
until caramelized. Set aside.
3. In a saucepan over medium
high, cook the jackfruit for
8-10 minutes, stirring occasionally.
Set aside.
4. In a dry skillet, toast the buns.
5. Assemble the sandwiches:
Spread the bottom buns with
barbecue sauce, then spoon jackfruit
onto each barbecued bun.
Top the jackfruit with caramelized
onion slices, then slaw, followed
by the top halves of the buns.
