Red Onion Brûlée
Ingredients:
1 cup red onion, small dice
½ cup red wine
¼ cup red wine vinegar
¼ cup sugar
Method:
Simmer all ingredients until soft and
liquid has evaporated. Garnish with
crumbled goat cheese, smoked sea
salt and microgreens.
Meyer Lemon Coulis
Ingredients:
1 cup Meyer lemon juice
1 teaspoon powdered gelatin
Method:
Boil, cool and then puree.
Swirl around bowl before adding
other ingredients.
