Back to School Pencil Waffles

INGREDIENTS
• Frozen waffles
• White bread
• Raisins
• Raspberries/Strawberries
PREPARATION
1. Toast the waffles until golden and then cut into
large rectangles.
2. Toast the bread and cut into triangles for the tips
of the pencils.
3. Add a raisin to one of the tips of the bread for the
lead of the pencils.
4. Add either raspberries, or cut up strawberries, for
the pencil eraser.
5. Arrange ingredients to look like a pencil!

INGREDIENTS
• 1/2 cup creamy peanut butter (almond, cashew
butter OR sunflower / pumpkin seed butter work as
well) heated slightly until liquidy
• 1/4 cup liquid honey. (brown rice syrup, agave
syrup or date paste will work as well)
• 1/4 cup grated coconut- swap with ground flaxseed,
oat flour or protein powder instead if you are not
a fan of coconut - you might have to adjust the
amount of sweetener to your taste
• 2 cups oats – (1 cup rolled oats and 1 cup quick
oats) use gluten free if necessary
• 1/3 cup mini chocolate chips or chopped chocolate
chunks* (plus more for studding, if desired)
• Pinch of salt- optional but highly recommended for
offsetting the sweetness
Optional Add-Ins
-- 1 teaspoon pure vanilla extract
-- 1 tablespoon ground flaxseeds or ground chia seeds
-- 1 tablespoon melted coconut oil
-- raisins or dried cranberries instead of or half with
chocolate chips

PREPARATION
1. In a large bowl, mix together heated nut butter
and honey until smooth.
2. Stir in shredded coconut, oats and salt and mix
until well combined. Add optional add-ins if
desired. Fold in chocolate chunks/chips.
3. Wet hands slightly and form dough tightly into
1” - 1.5” balls. If dough doesn’t stick together add
1/2 tablespoon water (or melted coconut oil) at a
time until dough comes together, or place dough
in the fridge for 30 minutes prior to forming
dough balls so it’s easier to handle.
4. Press additional chocolate chips evenly around
dough, if desired.
5. Store in airtight container in refrigerator or
freezer until ready to enjoy.
