Easy Corn Pudding
Well, the cold temperatures of winter are in full swing and it’s time to treat
yourself to some soul pleasing comfort food. This recipe has two of my
favorite words in it, “Easy” and “Pudding.” Don’t let the name fool you
though, this is not a dessert, but a super tasty side dish. I know I originally
got this recipe online and there are many variations, but this one is my go-to
standard.
Ingredients:
1 can of corn, drained
1 can of creamed corn
1 cup of sour cream
1 stick of melted butter
1 8oz. box of Jiffy Corn Muffin mix
Directions:
Preheat oven to 350 degrees. Melt the butter in the casserole dish and add all
ingredients and stir until completely combined. Transfer to an 8 X 8 casserole
pan and bake for 45 minutes or until golden brown. Let sit 10 – 15 minutes
and serve. Double the recipe for a 9 X 14 dish. Super simple and super
scrumptious.
