Tortilla Soup
by Scott Margolis of Scott’s Table
Ingredients:
2 tablespoons olive oil
½ cup carrots, peeled, chopped
1 cup onions, chopped
½ cup celery, chopped
1 tablespoon garlic, minced
1 tablespoon chipotle chilies in Adobo, minced
1 teaspoon chili Powder
2 teaspoons cumin
½ teaspoon coriander, ground
4 cups chicken broth
1 pound fire roasted tomatoes, canned
1 pound corn
2 tablespoons lime Juice
To taste salt and pepper
Garnishes:
1 cup tortilla chips, crushed
1 cup avocado, diced
4 tablespoons cilantro, chopped
1 pound chicken, cooked, diced or shredded
1 pound shrimp, cooked
Heat oil in a large pot on medium high heat.
Add carrots, onions, and celery and cook for
about 6 minutes, stirring occasionally. Add garlic
and cook for 30 seconds, continuously stirring.
Add chipotle chilies, chili powder, cumin, and
coriander and cook for 1 minute, stirring often.
Add chicken broth, fire roasted tomatoes, and
corn and bring to a boil. Reduce heat and keep
at a low simmer for about 15 minutes. Remove
from heat and stir in lime juice. Taste soup and
adjust seasoning with salt and pepper. Ladle
soup in bowls and garnish with tortilla chips,
avocado, and cilantro. Note: If using chicken
or shrimp, add to soup during last 5 minutes of
simmering process. Makes 8 Servings. ☐
