Marvin talks about
Micros with almost
envangelical zeal. He
is proud of what he
has accomplished and
enjoys supplying his
clients with the freshest
micro-herbs hydroponic
micro-greens, micro
vegetables, exotic
tiny greens, tiny lettuces
and a full line of other
herbs. The products are
harvested daily and cut
to order then shipped nationwide. Many Chefs use
Cahaba products as not only a garnish, but as a unique
and flavorful compliment to their main dishes.
“All of our products receive nutrient rich
water delivered
directly to the
root via micro
drip irrigation”,
says
Marvin. Water
with nutrients
is recycled
through an underground
tank,
which keeps
the water cool
as well as away
from many
airborne contaminants.
The water is tested and re-used to
water the plants. Hydroponic farming yields
10-20 times more product per acre than field
production.
Wilhite grows 14 types of micro-greens at
his farm, including mustard, beets, broccoli
and cabbage. The micro cilantro is excellent,
strong but without the “soapy” taste; the micro
basil is also powerful, yet sweet. All of
the herbs have distinct and notable properties.
There are so many from which one may
choose i.e. caliente wasabi green, red mustard, spicy
dikon radish, cilantro and so much more.
Fighting Cancer
Researchers at Johns Hopkins University have
found that broccoli shoots contain the cancer-fighting
agent sulforaphane, more even than fully grown broccoli.
When his mother was diagnosed with ovarian
cancer in 1999, Wilhite began to cultivate the greens.
Her cancer went into remission for five years. It’s
impossible to directly link the greens to her improved
health, however Wilhite noted that she ate them every
day.
Some doctors are becoming distributors, selling
Wilhite’s micro greens to patients.
