Pork Secreto

I’m going to let you in on a little secreto, or
“secret” cut of pork…the Pork Secreto which
is quickly becoming one of my favorite cuts of
meat. There is very little information in cooking
magazines or on the internet about this cut, and
much of the information is very contradictory.
One butcher will say that it is pork skirt steak;
one will say it is pork shoulder steak; others will
say it is from “the top of the brisket,” or from
“between the shoulder, ribs and fatback,” or it is
“a thin strip of pork located under a thick layer
of belly fat.” My take on all of this is that there is
no definitive answer, and it just depends which
butcher you ask.
Scott’s Table’s farmers and suppliers know
that we are always looking for interesting and
exciting products, and this certainly checked
all the boxes. I was told by one of my purveyors
that I needed to give this product a try, and it has
been absolutely a wonderful selection.
Since I use mostly NC raised, pork, beef, and
poultry, this product had to have an exceptional
story and product. This Pork Secreto is from
Beeler’s Pork in Madison County, Iowa. They
raise European “Red” Duroc pigs which is
a superior breed known for its perfect pH,
beautiful marbling and texture. They are
antibiotic and hormone free and raise the pork
humanely.
Their Pork Secreto is a highly marbled, fairly
thin cut, about ¾” thick, and weighs about 8 to
12 ounces. It is cut from between the belly, where
bacon comes from, and the ribs. We cook it over
high heat to medium doneness, and the result
is a juicy, tender, delicious cut of pork that eats
like a steak. This cut has many possible cooking
methods, and it also takes well to sauces and
marinades. It was a lot of fun to create and taste
test many different recipes.
Sometimes it is important to embrace your
adventurous side and give a new cut of meat or
a new recipe a taste. You will never know what
amazing “secreto”s are out there unless you are
willing to take a bite. For me food is always a
wonderful adventure and should feed the soul
