Ingredients:
• 2 cups halved multicolored
cherry tomatoes
• 1/8 teaspoon kosher salt
• 1 cup chopped cucumber
• 1/2 cup thinly sliced red onion
• 1/4 cup chopped black olives
• 2 tablespoons fresh oregano leaves
• 2 tablespoons olive oil
• 1 1/2 tablespoons red wine vinegar
• 1/8 teaspoon crushed red pepper
Directions:
Combine tomatoes and salt in a large bowl.
Let stand 5 minutes. Add cucumber, onion,
olives, oregano leaves, olive oil, vinegar, and
crushed red pepper; toss.

Bradley Wellness Center’s registered clinical
dietician, Jaimee Cooper, MS, RD, LD,
first learned the importance of a healthy
relationship with food when her father
began having chronic heart issues while she
was in high school. “Ever since then, I have
made nutrition and physical activity priorities
in my life,” says Jaimee.
Jaimee provides dietary counseling
for Bradley Wellness Center members,
non-members, and patients of Hamilton
Medical Center Cardiac Rehabilitation
program at Bradley Wellness Center. In
addition to presenting interactive cooking
demonstrations, she instructs participants
on how to shop and cook with a healthy
heart as their goal. Participants are always
encouraged to bring friends or family
members with them to the sessions.
Jaimee earned a Bachelors of Science
in Food and Nutrition Sciences with a
concentration in Dietetics from Middle
Tennessee State University and a Masters
of Science in Family and Consumer Science
from the University of Tennessee at Martin.
She has played soccer for Middle Tennessee
State University and the Chattanooga Futbol
Club women’s semi-professional team. “In
addition to eating right, staying active will
help keep you and your heart in shape,”
says Jaimee.
