came next in 2000. Then we sold it to the current owner
and opened another restaurant, The Chef’s Table, in 2003.
I hired Josh Monroe when we opened and turned around
and sold him the business three years later. From there,
we opened Church Street Depot in 2015, The Pigeon Grill
in 2017, and now The Pharmacy in 2018.
What’s been the best part through all of this? Well
that’s easy. The best part has been working for food.
(smiling)
What is your management style? You know, I just
expect them to do their job. I am responsible for giving
them all the tools to do it with. It’s pretty cut and dry. I’ve
also learned to not judge anyone until after they receive
their first paycheck. That’s when I know if they have a real
work ethic or
if they don’t.
Do you recall someone who you have trained or
mentored? Where did they start and where are they
now? Yes. Deanna Rose started working with me at The
Wine Seller. With her experience there, she moved up to
be the Sous Chef at The Swag in Waynesville. We are very
proud of her.
Have you had any celebrities come into your
restaurant? As a matter of fact, the Chief Justice of the
NC Supreme Court came to the WineSeller yesterday and
then ate lunch at The Patio. Bev Perdue, the Former
Governor of North Carolina has also dined in some of
our establishments.
What advice have you received in life that you still
apply to your business today? That’s a funny question.
The best advice I received was to never go into the
restaurant business. (Laughing)
Is there a recipe you would like to share with our
r eaders? Now why in the world would I want to do that?
