their dessert
creations from

at the Chefs’
Showcase.
Not being able to choose between three
ideas, they combined them on one plate. A
raspberry rose tea and marzipan chocolate
bar with a Jackson Pollock art design was
easy to recognize, as was the serving of
coconut gelato with passion fruit croustillant.
However, the tropical entremet of orange and
passion cremeux, citrus sponge and hazelnut
streusel had to be opened to discover the
multi-layered goodness within it. As Ugarte
sang “Feeling Good,” we enhanced our
pleasure with glasses of Ca’ Bianca Brachetto
d’Aqui from the Piedmont region of Italy
that sommelier Biancolini claims as his
birthplace.
Chef Jeff Holland of the Sandcastle
Restaurant in Clearwater was assigned
the task of concluding this meal with a
cheese course. He assembled a plate of
homemade lemon pecan cheese, along
with lime cilantro jam and mint raspberry
jam, which was served with a chocolatebased
drink that Biancolini proclaimed
to be “Holy Heart of Darkness Affogato.”
The evening concluded with singer
JoAnne Andrews enthralling us with a
roaring rendition of “This is Me.” This
fundraiser hosted by the Church of
Scientology and Tampa Bay Magazine helped
support two charities that are so devoted to
helping children in our community –– the
Children’s Home Network of Tampa and
the Clearwater Community Volunteers.
Additional donations were made by A
Chair Affair, Over the Top Rental Linens,
Sysco food service, and of course the chefs,
sommelier, attentive servers and talented
performers. 9
You have probably never had chicken wings like these, yet all the
traditional ingredients were there, except for the bones.
Chef Vanessa Marquis
said her fourth
course duck entrée
creation was inspired
by the lives
of Mexican artists
Diego Rivera and his
wife Frida Kahlo.
