Dill Pickle Pasta Salad
Calling all Dill Pickle fans! You are going to love this Dill Pickle Pasta Salad. If
you felt you needed an excuse to eat more dill pickles, this salad has got your
back. But seriously, who needs an excuse to eat more pickles. AMIRIGHT??
My love of pickles is only slightly overshadowed by my love of cheese. Lucky
for me, this Dill Pickle Pasta salad has got both.
Ingredients:
½ lb. dry pasta –Shell. Rotini, or Penne (about 3 cups)
¾ c. sliced pickles
1 c. diced cheddar cheese
3 T. finely diced onion
2 T. fresh dill
½ c. pickle juice

Dressing:
2/3 c. mayonnaise
1/3 c. sour cream
1/8 t. cayenne pepper
4 T. pickle juice
Salt and Pepper to taste
Dressing:
1. Boil pasta according to package directions. Run under cold water to stop
cooking.
2. Toss cold pasta with about ½ c. of pickle juice and set aside for about 5
minutes. Drain and discard pickle juice.
3. Combine all dressing ingredients in a small bowl. Mix well.
4. Toss all ingredients in a large bowl. Refrigerate at least 1 hour before serving.
