I am beside myself to announce March’s Bartender of the Month! Not only
is this accolade wayyyy past due, it’s just waayyy past due!!! Luis Galvan
of Agave Mexican Restaurant is our March Man and the best part of the
interview was that he didn’t know it was happening until I walked in the
door. Abraham Lara, the Owner of Agave, is very sneaky and knew that Luis
would try to make a run for it! Ha-ha!! Gotcha!
So, with margarita in hand (me), I got the opportunity to sit down with
Luis and get the scoop on his life: Luis was raised in Long Beach, Ca. with
his two sisters, until his mom’s job was moved to Lexington, Nebraska,
so off they went. Luis graduated from high school there and moved on to
Indianapolis, Indiana where he met that girl. That girl being the one who got
him to move to Savannah. Well, bless her heart, she’s not around anymore,

but Luis is here to stay and that’s what matters!
Getting his first serving job at Pepino’s in the Oglethorpe Mall was
meant to be. His first customer was Abraham Lara! Luis managed to not
spill anything on his first customer and the two became fast friends. When
Abraham opened Agave on June 29, 2016, Luis was a natural fit and hasn’t
looked back since.
Luis was asked the main four Questions of Life:
Tybee Life: Technically a Savannah resident, but we don’t care. Tybee
is in the heart!
Passion: Remodeling cars. Specifically, his own – a Honda Civic and a
Dodge Ram.
When He Grows Up: Married with kids and living happily ever after.
Spirit Animal: An Eagle (that answered without hesitation) as they are
free and fly wherever they want.
I almost didn’t ask what Luis’ go-to drink was as it’s kind of a given! The
Margarita of course! Agave has a 32 ouncer that will literally knock you
on your …. y’all! Go see Luis! His nickname is “Chiquilin” (pronounced
chik-o-lean – for us non habla people). It means ‘small person’ and when
you meet Luis you will have a good laugh over that one. Oh, and if he tries
to pull that ‘no habla English’ on you, don’t fall for it! Luis is definitely a fun
guy and you are going to enjoy your dining experience hanging out with
him.
