blue agave nectar, 3/4 oz water, shaken
and poured over small ice chunks.

At LUNA, located in the Hilton
Carillon Hotel in St. Petersburg, one of
the bartenders was speaking with an
associate about their local cat, Luna. A
customer sitting at the bar asked when
there was going to be an eclipse of the
moon, as the customer assumed Luna
was about an eclipse. A conversation
ensued, and the decision was made to
invent a drink named, Eclipse, reflecting
the restaurant’s unique look.
The recipe for the Eclipse is to make a
Florida fresh rum cocktail and then pour
Coastal Vines Cabernet over the top to
create the drink’s distinctive look.
The Columbia Restaurant Mojito
has been the cocktail of choice since the
Columbia in Ybor City opened its doors
in 1905. Everyone enjoys their refreshing
mojito that is made table side by the
pitcher with hierbabuena (mint), fresh lime
juice and Don Casimiro Classic Silver
Rum, the Columbia’s own private label
named for the restaurant’s founders.

when we tasted our first mojito.”

recipe includes 7 ounces of Don Casimiro
Classic Silver Rum or any light rum, 1 ¾

mint (packed tightly), juice of two limes,
mint simple syrup, lime slices and sugar
cane swizzle sticks. Fill a pitcher with ice
and add all of the ingredients. Stir well.
Serve in glasses garnished with mint
sprigs, lime slices and sugar cane swizzle
sticks.
Salt Rock Grill in Indian Shores is
proud of its Rocks Burning cocktail.
The recipe includes 1.5 oz orange vodka,
1.5 oz fresh-squeezed orange juice, 1.5 oz
cranberry juice, 0.5 oz jalapeño simple
syrup and 1/8 lemon wedge-squeezed
in, which is served in a martini glass with
a lemon twist.
The Rocks Burning cocktail is a play off
the Salt Rock Grill name and the sweet/
hot heavenly burn that accompanies each
sip of this drink. Right before the drink
is brought to the bar guest or table, dry
ice is placed in the martini glass so that
it instantly starts smoking as though it
was burning. Everyone loves trying this
unusual drink due to its unique taste, the
flare of the effect and the thrill of trying
something new.
At the granddaddy of all drinking
establishments, Palm Pavilion, the Piña
Colada is the favorite of those enjoying
the sunset on Clearwater Beach. Coconut
rum is blended together with a mix of ice
cream and coconut. Then to make it extra
special they top it with unique dark rum
and finish it off with whipped cream and
toasted coconut. No wonder their Piña
Colada has gained such a big fan base.
