Jelly Doughnuts
Time: 2 hours 30 minutes for dough,
30 to 45 minutes for frying

• 2 Packages Yeast
• ½C Warm Water (110-115 degrees)
• ½C Warm Milk
• ⅓C Butter Softened
• ⅓C Sugar
• 3 Egg Yolks
• 1tsp Salt
• 3 ¾ C Flour
• 1C Powdered Sugar
• 3TBSP Jelly
• 1 Egg White Beaten
• Oil For Deep Frying
INGREDIENTS. Dissolve yeast in water, add milk, butter, 1/3C sugar,
egg yolks and salt. Mix well. Add enough flour to form a soft dough.
Do not knead the dough. In a greased bowl, cover and let rise until
doubled, about 1 1/2 hours.
Punch down. Turn onto a lightly floured surface, knead about 10 times.
Divide the dough in half. Roll each portion to ½” thick. Cut with a
floured 2 1/2” round cutter. Brush with egg white. Place on a greased
baking sheet. cover and let rise until doubled. About 1 hour.
Heat oil to 375. Fry a few at a time for 1-2 minutes on each side or
until golden brown. Drain on paper towels. Once cooled, squirt about
1/2 tsp jelly in the center using a pastry bag and long decorating tip.
Sprinkle with powdered sugar.
YIELD. 1 dozen
